Your red sauce reminded me of a Beaverton neighbor who ONLY knew how to cook in massive quantities (her stuffed pepper recipe was for two dozen peppers).
Her sauce had: 5 28oz cans crushed tomatoes; 3T sugar; oregano, pepper, red pepper to taste; 2 bay leaves; 4 sweet and 4 hot Italian whole sausages, 4 cloves garlic; and an 2 uncut flank steaks. Brown the meat in olive oil, then add the rest of the ingredients. Simmer for 3 hours. (The note said "all the flavor comes from the meat).
Another piece of beautiful writing…My go to: braised lamb shanks with an entire bottle of red wine. Takes hours, because that’s what it takes. 3x fond scraping - limpressive.

I grew up with an Italian step grandmother, who taught my mother and I to make her sauce, and her meatballs…fast forward 50 or so years, and I too make her sauce and meatballs when I need comfort. Once again Hank, you nailed it, thank you♥️
You're a very good writer. It's difficult to communicate what's going on without just blurting it out, and still have it be engaging. Meaning wrapped in a red sauce (which is very reminiscent of the one I grew up with).
