Other than the usual “how do I cook [insert animal here] questions, the most common question I get is: Why Mexico? Why do I cook so much Mexican food, and why am I obsessed with this country above all others, to the point where I have been intensely studying Spanish for nearly three years?
There is a short version and a long one. I’ll give you both here.
Short version is because the food is amazing, varied and uses most of my favorite ingredients, ingredients I can either hunt or grow easily here in Northern California.
That should be enough, but it isn’t.
