After a great mushroom hunt in the high country of New Mexico, laden with red-capped porcini, I was at a party and said that I wanted to make a dish with both wild mushrooms and green chile, in honor of New Mexico.
Several people said, almost in unison, “Steak Dunigan.” Never heard of it. They said it has been a standard at the venerable Santa Fe restaurant the Pink Adobe for generations, named for a patron — Pat Dunigan, best I can tell — who wanted green chiles with his steak. Good man.
A few recipes for Steak Dunigan pop up online, even one from the famous singer Dan Fogelberg, who apparently loved the dish. It’s basically steak, mushrooms, onions, green chiles and maybe garlic. Butter is the typical cooking fat. What’s not to love?
