Juniper Mustard Sauce
A perfect accompaniment to all sorts of game
This juniper mustard sauce is a thick, mayo-ish concoction based in spicy mustard that is tamed with oil, thickened with egg yolks, and laced with ground juniper berries. It’s a knockout with cold meats of any kind.
The other day I had corned a few deer tongues — yes, I know that’s an odd sentence — and was casting about for a sauce to serve them with. Turns out this juniper mustard sauce was just the thing.
