I cooked 2-4 chickens per year for 6 years. I got chickens that had a good life, whole and cooked them whole. I made it a special occasion. There were a few slips during travel.

Now I have a local farmer who raises freedom rangers at $5lb. The heads and feet aren’t on, but I buy them separately for my dogs at a lower price.

Now I’m up to about six a year.

Thanks for this post. People should also understand that the $.99 a pound meat is raised in a big box and is cut entirely by machines. You can find the USDA training video if you want to see it.

Another thing people seem to have forgotten is making chicken soup with the right kind of chicken... an old laying hen or rooster makes such a fantastic chicken stock/stew/soup/braise, it's a wonder you can't find them cheap in any markets except for Amish, Latin, and Asian. At least they know where it's at!
