This special box will be a combo of coho (silver) salmon, sockeye, and keta (chum) salmon. All the fish were pressure bled, a special process that removes all blood from the fish, leaving them cleaner tasting, firmer and with no smell.
I just cooked a keta tail portion last night and it was amazing. Keta, a/k/a chum, gets a bad rap. These are silver-bright fish, pressure bled and pretty. The flavor leans more trout-like because the meat is lighter and leaner than coho or sockeye.

All the fish is blast frozen and vacuum sealed in heavy vac bags.
